Egg Salad Sandwich

Fresh, Delicious and perfect snack made with home made egg salad.

INGREDIENTS

• 4 eggs
• 1½ teaspoons mayonnaise
• ¼ red onion, minced
• 1 tbsp prepared mustard
• ½ tsp dried dill weed
• lettuce
• ½ tsp paprika
• salt and pepper to taste

INSTRUCTIONS

1. In a saucepan place the eggs and add enough water to cover the eggs. Bring the water to a boil, cover the saucepan and remove from heat. Let the eggs stand in the hot water for about 12 minutes, then remove, cool and peel.
2. Chop the eggs, then in a large bowl, add the chopped eggs, mayo, dill, paprika, mustard, onion and salt and pepper. Mix well and mash with a fork. And that's it, super easy. Put the salad over some nice crisp lettuce on brown or white bread and you've got yourself a wonderful snack / lunch.
